In July 2016, Arnaud Faye joined Château de la Chèvre d’Or to take over the management of the hotel’s kitchens, particularly those of our two-Michelin-starred gastronomic restaurant, "La Chèvre d’Or".
If you haven't yet had the chance to meet him or taste his cuisine, here’s a glimpse of his remarkable journey to pique your interest and whet your appetite.
Arnaud Faye began his career in 1999, working successively in prestigious three-Michelin-starred establishments such as L’Arnsbourg in Baerenthal, Le Buerehiesel by Antoine Westermann, and Relais Bernard Loiseau.
In 2007, at just 29 years old, Arnaud Faye was appointed Chef at L’Espadon, the fine-dining restaurant of the iconic Parisian palace "Le Ritz".
Two years later, the restaurant was awarded its second Michelin star.
At the beginning of 2011, he joined the teams at Mandarin Oriental, Paris, for the opening of the new establishment, which earned two Michelin stars in less than a year.
A new challenge awaited him in 2012, when he took over the kitchens of L’Auberge du Jeu de Paume, a member of the Relais & Châteaux association and owned by His Highness Prince Aga Khan, in the heart of the Domaine de Chantilly.
The hotel's gourmet restaurant received its first Michelin star in March 2013 and a second star the following year, both of which were maintained in 2015 and 2016.
At La Chèvre d’Or, a two-Michelin-starred restaurant, Arnaud Faye celebrates the authenticity of an exceptional terroir, stretching from the rocky foothills of the Mercantour mountains to the deep blue of the Mediterranean. His menu is inspired by these striking contrasts, showcasing the finest Riviera and hinterland ingredients.
We look forward to welcoming you to embark on this journey of flavors and light.
